It’s May, and spring is in the air…finally! To celebrate, I’m cooking up a delicious menu of nutrition-minded cuisine at Stonewall Kitchen in York, Maine. We’ll discover the antioxidant benefits of a colorful, carrot-based appetizer, the detoxification and brain benefits of a curried egg salad, and the anti-inflammatory, heart-healthy advantages of a salmon and asparagus whole grain pasta sauté. We’ll finish off with a yogurt-based chocolate mousse. Along the way, I’ll present the basic principles and ingredients of a nutrition-minded cuisine approach.
