Mustard Jar Salad Dressing

Don’t let a single drop of Dijon go to waste!

There I was concocting a salad dressing from scratch, when I opened the Dijon mustard to find just enough clinging to the sides of the jar to add to the recipe—if only I could extract it. What to do? Instead of scrounging to empty the jar, I filled it instead! In went the rest of the ingredients, on went the top…and, with a vigorous shake or two, I had a quick-and-delicious dressing!

Ingredients

  • 1 tsp+ Dijon mustard
  • 2-3 Tbsp EVOO
  • 1 tbsp Champagne vinegar
  • 2 tbsp Balsamic vinegar
  • Fresh lemon juice from 1/2 lemon
  • 1-2 tsp Herbes de Provence
  • 1-2 cloves garlic minced/crushed

Optional Additions and Substitutions

  • Touch of OJ, to taste

Preparation

Simply add the ingredients to the jar—and shake! (Or…if your mustard jar is still full, just scoop out your teaspoon and create your dressing in a separate jar!)
